The second is the Siri we have always had, the one that sets timers, starts workouts or reads your health data. Apple describes it on the product page as on-device Siri, and the wording matters: it works with no phone and no connection.

The third is Siri AI, the generative assistant Apple announced on 8 June 2026, which holds back-and-forth conversations, understands your personal context and acts inside apps. That third layer does not live on the watch.

Where each request is actually processed

The Ultra 3 carries the S10 chip, with a 64-bit dual-core processor, a 4-core Neural Engine and 64 GB of capacity. That sounds like enough for some local AI, and it is, for classifying sensor signals. It is not enough for a language model.

When you talk to Siri AI from your wrist, the watch captures the audio and hands it to the paired iPhone. The phone runs the Apple Intelligence models and, if the request needs more capacity than your pocket holds, sends it encrypted to Private Cloud Compute. The answer travels back the same way. The watch is the microphone and the screen for that whole trip.

One detail in Apple support documentation confirms it without ambiguity. Apple Intelligence requires 7 GB of free storage on the device, and the same page notes that this requirement does not apply to the Apple Watch. It does not apply because no model is ever downloaded to the watch.

What the watch handles on its own

Not everything depends on the phone, and this is the good part for a European buyer.

Workout Buddy is the feature that improved most in watchOS 27. It uses your training history plus live pace, distance and duration data to talk you through a session. Two things change with watchOS 27: it speaks Spanish, and it stops needing the iPhone nearby. Apple lists those as two separate new features on its own page, in both languages.

Hypertension notifications are also computed on the watch, as are fall detection, sleep tracking and heart-rate alerts. And the classic Siri still answers timer and workout requests offline.

In other words, the Ultra 3 does plenty of local inference. What it does not do is hold a conversation. Why Siri AI is not coming to the European Union

This is where the European reading parts ways with what you will read in United States coverage.

Apple decided not to ship Siri AI in the European Union on iOS 27 or iPadOS 27 because of its disagreement with the European Commission over the Digital Markets Act. According to Apple, the Commission interpretation would force it to give any third-party assistant direct access to users private data and control over other installed apps. Craig Federighi, senior vice president of software engineering, summarised the deadlock by saying that the regulators refusal to engage on solutions that preserve privacy and security means Apple currently has no timeline for Siri AI availability on iOS and iPadOS in the EU.

The watch falls by domino effect. macOS 27 and visionOS 27 do get Siri AI in Europe, but watchOS 27 does not, because it needs an iPhone that has it. Apple own Spanish website puts it in one unadorned line, which translates as: Siri AI will be usable in English later this year, and for now it will not be available on iOS, iPadOS or watchOS in the EU.

Two further restrictions have nothing to do with Brussels: Siri AI launches in English only, and behind a waitlist.

What Apple pages say depending on the language

We have not had an Ultra 3 on our wrist, so we are not going to fake a product review. What can be measured, and what anyone can reproduce, is how much Apple commercial message changes between its United States and its Spanish website.

On 4 September 2026 we downloaded the four official pages, stripped the markup and counted the terms across the plain text. The result:

The United States watchOS 27 page opens with a block headed "New Siri AI". On the Spanish page that block does not exist: the single occurrence of the term is the notice saying it will not be available. And on the watch product page, the Spanish version never mentions Apple Intelligence, while the United States one cites it three times to explain Workout Buddy.

Apple is not selling the Ultra 3 as an AI device in Spain. That conclusion is not ours, it is theirs.

The Ultra 3 against the Series 11 and the Pixel Watch 4

The reading is uncomfortable for the whole category: none of the three watches runs the generative assistant on the wrist. Google got to the raise-and-talk gesture first, and its assistant is available in Spain in Spanish, but Google equally requires Gemini to be the default assistant on a connected phone. The only offline mode that exists today is the Pixel Watch 5 one, and it is limited to basic voice actions in aeroplane mode.
